Step-by-Step Instructions
  1. Preheat your air fryer to 340°F (170°C) for about 5 minutes.
  2. Thinly slice the sweet potatoes to about 1/8-inch thick and toss with olive oil, garlic, salt, and pepper.
  3. Layer the sweet potato slices in greased foil muffin tins, alternating with mozzarella cheese.
  4. Mix panko breadcrumbs, parmesan, basil, and melted butter for the topping.
  5. Spoon the breadcrumb mixture over each stack and cook in the air fryer for 30 minutes.
  6. Allow to cool slightly for 5 minutes before serving.
