  • 4 cloves Minced Garlic fresh is best
  • 1 teaspoon Salt preferably sea salt
  • 1 teaspoon Pepper freshly cracked
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Dried Oregano or triple the amount if fresh
For the Topping
  • 1 cup Grated Parmesan or nutritional yeast for vegan
  • 2 tablespoons Fresh Parsley optional
  • 1 teaspoon Red Pepper Flakes to taste

Method
 

Cooking Steps
  1. Boil the Potatoes: Bring a large pot of salted water to a boil. Cook the baby potatoes for 15-20 minutes until tender, then drain and cool slightly.
  2. Preheat the Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper or olive oil.
  3. Smash the Potatoes: Place the cooled potatoes on the baking sheet and smash each to about ½-inch thickness.
  4. Prepare the Garlic Mixture: In a bowl, mix olive oil, melted butter, garlic, salt, pepper, smoked paprika, and oregano.
  5. Brush the Potatoes: Coat the smashed potatoes with the garlic mixture evenly.
  6. Add the Parmesan: Sprinkle grated Parmesan over each potato to create a cheesy topping.
  7. Bake to Perfection: Bake for 25-30 minutes until golden brown. Optionally broil for an extra crunch.
  8. Garnish and Serve: Remove from oven, garnish with parsley and red pepper flakes, and serve immediately.
