Step‑by‑Step Instructions for Bang Bang Chicken
  1. In a medium bowl, whisk together 1/2 cup mayonnaise, 1/4 cup Thai sweet chili sauce, 2 tablespoons Sriracha, and 1 tablespoon honey until smooth. Cover and set aside.
  2. In a large bowl, combine 1 cup buttermilk, 1/2 cup flour, 1/4 cup cornstarch, 1 egg, 1 tablespoon Sriracha, 1 teaspoon garlic powder, and a pinch of salt and pepper. Whisk to a smooth batter. Add chicken and marinate for 10 minutes.
  3. Spread 1 cup of panko breadcrumbs on a plate. Dredge the marinated chicken in breadcrumbs, pressing gently for an even coating.
  4. Heat about 1 inch of canola oil in a skillet over medium-high heat until 365°F. Fry chicken in batches for 2-3 minutes on each side until golden and crispy. Drain on paper towels.
