Ingredients

For the Tofu
  • 1 block Extra-firm Tofu The key to achieving that irresistible crispy texture; avoid softer varieties for best results.
  • 2 tablespoons Cornstarch Helps create a golden crust when baked.
  • 1 cup Panko Breadcrumbs These add delightful crunch; opt for gluten-free panko if needed.
For the Sauce
  • 1/2 cup Vegan Mayonnaise Forms the creamy base of the dish; tahini is a fantastic lower-fat substitute.
  • 2 tablespoons Sriracha Gives the dish its signature spiciness.
  • 1 tablespoon White Sugar Balances the heat of sriracha perfectly.
  • 1 teaspoon Salt Enhances the overall flavor; don't skip this crucial ingredient.

Step-by-Step Instructions
  1. Prepare Tofu: Remove extra-firm tofu from packaging and drain excess liquid. Wrap the tofu in a clean kitchen towel and place a weight on top for about 5 minutes.
  2. Cut Tofu: Slice the pressed tofu into approximately 32 evenly-sized cubes, each 1 inch in size.
  3. Preheat Oven: Preheat your oven to 400ºF (205ºC).
  4. Mix Coating: Combine cornstarch, panko breadcrumbs, and garlic powder in a medium mixing bowl.
  5. Coat Tofu: Gently add cubed tofu to the coating mixture, tossing lightly to ensure each piece is covered.
  6. Bake Tofu: Line a baking sheet with parchment paper and spread the coated tofu cubes in a single layer. Bake for 40 minutes, flipping halfway through.
  7. Make Sauce: Whisk together vegan mayonnaise, sriracha, sugar, and salt in a separate bowl until smooth.
  8. Combine: Transfer baked tofu to the bowl with the sauce and gently mix until coated.
  9. Serve: Serve immediately, garnished with red pepper flakes and chives or scallions.
