Method
 

Step-by-Step Instructions
  1. Pound the chicken between two sheets of plastic wrap until they reach about ½-inch thickness for even cooking.
  2. Prepare the batter by combining eggs, flour, salt, and pepper in a shallow dish, whisking until smooth.
  3. Coat each pounded chicken thigh in the batter and then roll in panko breadcrumbs for an even layer.
  4. Heat oil in a skillet over medium-high heat to 350°F, and fry the chicken for 4-6 minutes per side until golden brown.
  5. Moisten your musubi mold or Spam can and fill it with about ½ cup of sushi rice, pressing down firmly.
  6. Assemble the musubi by spreading tonkatsu sauce on the rice block, placing crispy chicken on top, and wrapping with nori.
