  • 2 cloves Garlic Minced
  • 1 cup Peas Frozen or fresh
  • 1 tablespoon Curry Powder Adjust according to taste
  • 1/2 cup Vegetable Broth
  • 1 cup Vegan Cheese Shredded
For Assembly
  • 8 pieces Tortillas Corn or wheat
  • 2 tablespoons Vegetable Oil For brushing

Method
 

Step-by-Step Instructions
  1. Prepare Potatoes: Peel and chop potatoes, boil for 12-15 minutes until fork-tender, then mash.
  2. Sauté Vegetables: Heat oil, sauté onions until translucent, add carrots, garlic, and spices, cook for 1 minute.
  3. Combine Filling: Add vegetable broth and peas, cook briefly, then fold in mashed potatoes and vegan cheese.
  4. Preheat & Assemble: Preheat oven to 410°F (210°C), fill tortillas with 2-3 tablespoons of filling, roll tightly.
  5. Bake: Bake taquitos for 17-20 minutes until golden brown, optionally broil for extra crunch.
  6. Serve: Let cool slightly, serve with salsa, guacamole, or vegan sour cream.
