  1. If using frozen soft shell crabs, place them in the refrigerator to thaw overnight. Rinse crabs under cold water and pat dry.
  2. Whisk together eggs, mustard, and milk in a bowl to create a milk bath.
  3. Dip each crab in the milk bath, then coat in flour and fish fry mix, ensuring even coverage.
  4. Heat oil in a deep fryer or skillet to 350°F (175°C). Use a thermometer to check temperature.
  5. Fry the crabs for 2-3 minutes on each side until golden brown and crispy.
  6. Remove crabs and drain on a wire rack to keep them crispy.
