- In a large mixing bowl, gently combine crab meat, mayonnaise, green onions, lemon zest, garlic powder, and the beaten egg. Season with salt and pepper. Set aside.
- Scoop portions of the crab mixture and form into bite-sized balls or patties, about 1-2 inches in diameter. Place on a parchment-lined baking sheet.
- Spread panko breadcrumbs on a flat plate. Roll each crab bite in breadcrumbs, pressing gently. Return to the baking sheet.
- In a skillet, heat enough oil to cover the bottom 1/4 inch deep over medium-high heat. Test with a breadcrumb to check if oil is hot.
