Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash the Yukon Gold potatoes thoroughly and cut them into uniform 1/3-inch sticks.
  3. Soak the cut fries in cold water for 10-15 minutes, then drain and rinse.
  4. Thoroughly dry the fries using a clean kitchen towel or paper towels.
  5. Drizzle olive oil over the fries and add salt, black pepper, garlic powder, dried oregano, and dried dill. Toss to coat.
  6. Line a baking sheet with parchment paper and spread the fries in a single layer.
  7. Bake the fries for 15 minutes, then flip and bake for an additional 6-8 minutes until golden brown.
  8. Remove the fries from the oven, top with fresh parsley, chopped red onion, and crumbled feta cheese.
  9. Serve warm with tzatziki, aioli, or lemon wedges.
