- Preheat your oven to 375°F (190°C). Gather your ingredients and equipment including a mandoline slicer and a baking dish.
- Wash and peel the Russet potatoes, then slice them into 1/8-inch thick rounds using a mandoline slicer. Soak the slices in cold water to prevent browning.
- Arrange the potato slices upright in your baking dish, overlapping them slightly. Brush each layer with a mixture of melted butter and olive oil, sprinkling garlic, thyme, salt, and pepper between the layers.
- Cover the dish tightly with aluminum foil and bake for 45 minutes to steam the potatoes.
