Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment including a mandoline slicer and a baking dish.
  2. Wash and peel the Russet potatoes, then slice them into 1/8-inch thick rounds using a mandoline slicer. Soak the slices in cold water to prevent browning.
  3. Arrange the potato slices upright in your baking dish, overlapping them slightly. Brush each layer with a mixture of melted butter and olive oil, sprinkling garlic, thyme, salt, and pepper between the layers.
  4. Cover the dish tightly with aluminum foil and bake for 45 minutes to steam the potatoes.
  5. Remove the foil and increase the oven temperature to 425°F (220°C). Roast for an additional 30 minutes, or until golden and crispy.
  6. Let the Crispy Potato Roast cool for a few minutes before serving to enhance the texture.
