  • 1 tablespoon yogurt or sour cream

Method
 

Step‑by‑Step Instructions
  1. Mince the shrimp in a food processor until a smooth, sticky paste forms, about 15-20 seconds. Transfer to a large mixing bowl.
  2. Add the egg white, white wine, shallot, green onions, parsley, cornstarch, ginger, and sesame oil to the shrimp. Stir until combined, about 2-3 minutes.
  3. Form the shrimp mixture into walnut-sized balls, about 1.5 inches in diameter. You should have about 12 balls.
  4. Roll each shrimp ball in panko breadcrumbs until thoroughly coated. Let rest for about 5 minutes.
  5. Whisk together ketchup, mayonnaise, yogurt, parsley, and Sriracha for the dipping sauce. Refrigerate until serving.
  6. Heat canola oil in a large saucepan to 350°F (175°C) over medium heat.
  7. Carefully lower 3-4 shrimp balls into the hot oil, frying each batch for 2-2.5 minutes until golden brown.
  8. Serve hot with the dipping sauce.
