  • 1 cup corn Frozen corn is an excellent substitute.
  • 1 cup black beans Rinsed well to lower sodium levels.
  • 1 cup spinach Chopped, fresh is best.
  • 1 red bell pepper diced Can substitute yellow or orange peppers.
  • 1 jalapeño diced Deseed for less spiciness.
For the Seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
For the Cheese
  • 1 cup Monterey Jack cheese Shredded, can use cheddar or pepper jack.
For Wrapping
  • 1 package egg roll wrappers Ensure wrappers are fresh.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine shredded cooked chicken, sweet corn, black beans, spinach, diced red bell pepper, and jalapeño.
  2. Sprinkle cumin, chili powder, salt, and black pepper over the filling, stirring well.
  3. Gently fold in the shredded Monterey Jack cheese.
  4. Lay out the egg roll wrappers in a diamond shape and place about 2-3 tablespoons of filling in the center.
  5. Roll the egg wrapper away from you, folding the sides inward and sealing with a little water.
  6. For baking, preheat oven to 425°F and line a baking sheet with parchment paper. Bake egg rolls for 15-20 minutes.
  7. For frying, heat oil to 350°F and fry egg rolls in batches for about 2-3 minutes on each side.
  8. Remove and drain on paper towels before serving.
