Ingredients
  

For the Patties
  • 1 cup Red Lentils cooked
  • 1 large Sweet Potato grated
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground Coriander optional
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • 0.5 cup Flour or gluten-free flour
  • 2-3 tablespoons Olive Oil for frying
  • 1 handful Cilantro chopped
For the Creamy Sauce
  • 1 large Avocado ripe
  • 1 tablespoon Lime Juice or lemon juice
  • 0.5 cup Yogurt or non-dairy version

Method
 

Cooking Instructions
  1. Cook 1 cup of red lentils in 2 cups of water over medium heat for 10-12 minutes until soft.
  2. Combine cooled lentils with 1 grated sweet potato, 1 finely chopped onion, 2 minced garlic cloves, spices, cilantro, and flour. Mix well.
  3. Let the mixture rest for 5-10 minutes.
  4. Heat olive oil in a skillet. Form patties and fry for 3-4 minutes on each side until golden brown.
  5. Prepare the sauce by blending avocado, cilantro, garlic, lime juice, and yogurt until smooth.
  6. Serve warm patties with creamy sauce on top.
