Ingredients
  

For the Tofu
  • 14 ounces Extra Firm Tofu Pressed and cut into cubes
  • 2 tablespoons Olive Oil Can substitute with neutral oil
For the Balsamic Tomato Sauce
  • 2 cups Cherry Tomatoes Halved
  • 3 cloves Garlic Mince well
  • 2 tablespoons Balsamic Vinegar Can substitute with red wine vinegar
  • 1 tablespoon Maple Syrup Use honey if not vegan
For Final Touches
  • 1/4 cup Fresh Basil Chopped
  • 1 teaspoon Red Pepper Flakes Optional for spice
  • 1/4 cup Chopped Nuts Walnuts or pine nuts recommended
  • Salt To taste
  • Black Pepper To taste

Method
 

Preparation
  1. Press the extra firm tofu to remove excess water, wrap in a kitchen towel with a heavy object on top for 15 minutes.
  2. Cut the tofu into bite-sized cubes and drizzle with olive oil, salt, and black pepper.
Cooking
  1. Preheat oven to 400°F (200°C) and arrange tofu cubes in a single layer on a lined baking sheet. Bake for 25-30 minutes, flipping halfway.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for 1 minute.
  3. Add the halved cherry tomatoes and cook for 5-7 minutes until softened.
  4. Stir in balsamic vinegar and maple syrup and simmer for 2-3 minutes until thick.
  5. Fold in the baked tofu and heat through for 1 minute. Serve garnished with fresh basil and nuts.
