Step-by-Step Instructions
  1. Wash zucchini and grate. Squeeze out excess moisture using a kitchen towel.
  2. Combine drained zucchini with eggs, flour, Parmesan, yogurt, garlic, and herbs. Mix well.
  3. Heat skillet over medium heat, coat with oil. Form patties and cook for 3-4 minutes on each side until golden.
  4. Alternatively, preheat air fryer to 400°F. Cook patties in a single layer for 8-10 minutes, flipping halfway.
  5. Remove from heat, let cool on paper towels. Enjoy hot or store in an airtight container.
