Ingredients
  

For the Filling
  • 2 cups Cooked and shredded chicken Substitute with any cooked poultry
  • 1 tbsp Chili Powder Try taco seasoning for different flavor
  • 1 tsp Ground Cumin Coriander could work as a substitute
  • 1 tsp Garlic Powder Can use fresh minced garlic
  • 1 tsp Onion Powder Fresh or sautéed onions can be added
  • 1 tsp Paprika Cayenne can be used for extra heat
  • 1/2 tsp Salt Adjust to taste
  • 1/4 tsp Black Pepper Omit if sensitive to heat
For the Taquitos
  • 12 pieces Corn Tortillas Flour tortillas can be substituted
  • 1 cup Shredded Cheese Cheddar or Monterey Jack work great
  • 2 tbsp Cooking Spray or Oil Olive oil adds richer flavor

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the cooked and shredded chicken with chili powder, ground cumin, garlic powder, onion powder, paprika, salt, and black pepper. Mix thoroughly until well-seasoned and fragrant.
  2. Wrap corn tortillas in a damp towel and microwave for about 30 seconds to make them pliable.
  3. Lay a warm tortilla flat, add a spoonful of the chicken filling and a sprinkle of shredded cheese. Roll tightly into a cigar shape.
  4. Lightly spray or brush the assembled taquitos with cooking spray or oil on the outside.
  5. Arrange taquitos in a single layer in the air fryer or on a parchment-lined baking sheet. Cook at 375°F for 8-10 minutes in the air fryer or bake for 12-15 minutes in the oven.
  6. Carefully remove from the air fryer or oven, let cool slightly, and serve with salsa, guacamole, or sour cream.
