For the Salad
  • 2 medium Cucumbers Seedless Persian recommended
  • 1 small Red Onion Thinly sliced
  • 200 grams Feta Cheese Crumble by hand
  • 2 tablespoons Fresh Dill Substitute with fresh mint if desired
  • 2 tablespoons Fresh Parsley Chopped
  • 1 cup Cherry Tomatoes Halved, optional
  • 1/2 cup Kalamata Olives Sliced, optional
For the Vinaigrette
  • 1/4 cup Lemon Juice Freshly squeezed
  • 1/3 cup Extra Virgin Olive Oil Organic preferred
  • 1 teaspoon Dried Oregano
  • to taste Salt & Black Pepper Essential for seasoning

Method
 

Preparation Steps
  1. Wash the cucumbers under cool running water. Slice them thinly and place in a large mixing bowl.
  2. Thinly slice the red onion and crumble the feta cheese by hand.
  3. In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and pepper until emulsified.
  4. Toss the cucumbers, red onion, and feta in the large bowl. If using, add cherry tomatoes and olives.
  5. Drizzle the vinaigrette over the salad and toss gently to coat.
  6. Let the salad rest for about 10 minutes before serving.
  7. Serve the salad into bowls and enjoy immediately.
