Ingredients

  • 1 cup strawberries washed and hulled
  • 1 large English cucumber peeled and sliced
  • 2 cups watermelon diced
  • 1/4 small red onion thinly sliced, optional
  • 1/4 cup fresh mint chopped
For the Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons olive oil extra virgin

  • to taste pepper

Method
 

Preparation
  1. Wash and hull the strawberries, then slice them into quarters.
  2. Peel and thinly slice the cucumber into uniform pieces.
  3. If using, thinly slice the red onion.
  4. Cut the watermelon into bite-sized cubes.
Assembly
  1. In a large mixing bowl, gently combine the strawberries, cucumbers, watermelon, and red onion if using.
  2. Fold the ingredients together with a rubber spatula to mix evenly.
Dressing Preparation
  1. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
Combine and Serve
