Ingredients
  

For the Cream Mixture
  • 16 oz Mascarpone cheese Can be substituted with cream cheese.
  • 1 cup Heavy cream
  • 1/2 cup Amaretto liqueur May be replaced with almond extract.
  • 1/4 cup Cherry juice Can use more amaretto.
  • 1 cup Fresh cherries Frozen cherries can be used if drained well.
  • 1/2 cup Granulated sugar
  • 1/4 cup Cherry preserves Optional but recommended.
  • 1 tsp Vanilla extract
For the Base and Topping
  • 24 pcs Ladyfingers Must be quickly dipped.
  • 2 tbsp Cocoa powder For dusting.
  • 1/2 cup Dark chocolate (shaved or grated) For garnish.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, add the mascarpone cheese and heavy cream. Using an electric mixer, beat on medium speed for 2-3 minutes until the mixture is smooth and fluffy.
  2. Add in the amaretto liqueur, cherry juice, and vanilla extract to the mascarpone mixture. Continue mixing on low speed for 1-2 minutes until thoroughly combined.
  3. Combine the granulated sugar and cherry preserves in a separate bowl. Gradually fold this sweet mixture into the mascarpone blend, beating gently.
  4. Gently stir in the chopped fresh cherries, folding them into the mascarpone mixture.
  5. In a shallow dish, mix equal parts amaretto and cherry juice for soaking the ladyfingers.
  6. Quickly dip each ladyfinger into the amaretto-cherry mixture, allowing them to soak for just a second on each side.
  7. Spread half of the mascarpone-cherry mixture evenly over the soaked ladyfingers.
  8. Repeat the dipping process with another batch of ladyfingers and place them on top of the mascarpone layer. Spread the remaining mascarpone mixture over the top.
  9. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, dust the top with cocoa powder and sprinkle with dark chocolate shavings.
