Step-by-Step Instructions
  1. In a large mixing bowl, combine mascarpone cheese and heavy cream. Use a hand mixer to whip until light and fluffy.
  2. Gently mix in the amaretto liqueur, cherry juice, and vanilla extract into the mascarpone mixture until silky smooth.
  3. In another bowl, combine granulated sugar and cherry preserves, stirring until blended, then add to the mascarpone mixture.
  4. Carefully fold in the chopped fresh cherries into the mascarpone mixture using a spatula.
  5. In a shallow dish, combine equal parts of amaretto and cherry juice, stirring well.
  6. Dip each ladyfinger into the amaretto and cherry juice mixture quickly and arrange them in a baking dish.
  7. Spread half of the mascarpone mixture evenly over the layer of dipped ladyfingers.
  8. Repeat the process with a second layer of dipped ladyfingers and spread remaining mascarpone mixture over them.
  9. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  10. Before serving, dust the top with cocoa powder and sprinkle with shaved or grated dark chocolate.
