Step-by-Step Instructions for Coffee Chocolate Cake
  1. Preheat your oven to 170ºC (340ºF) and prepare three 20 cm (8-inch) cake pans by lining with parchment paper.
  2. In a large mixing bowl, sift together flour, granulated sugar, dark brown sugar, cocoa powder, baking powder, baking soda, cornstarch, and salt.
  3. In a separate bowl, whisk together black coffee, vegetable oil, sour cream, eggs, and vanilla until smooth.
  4. Slowly fold the wet mixture into the dry ingredients until just combined.
  5. Evenly divide the batter into the prepared pans and bake for 28-30 minutes.
  6. After 10 minutes, transfer the cakes to a wire rack to cool completely.
  7. Prepare buttercream by mixing a small amount of espresso powder with water to create a concentrate, then beat room-temperature butter.
  8. Gradually add powdered sugar, coffee mixture, and vanilla to the whipped butter and mix until smooth.
  9. Level the cooled cake layers before stacking with buttercream in between.
  10. Apply a crumb coat and then a final layer of buttercream on the sides and top.
  11. Decorate as desired and serve.
