Ingredients
  

For the Crust
  • 1 cup Oreo-style cookies or similar vegan cookies
  • 4 tablespoons Vegan butter melted
  • a pinch Sea salt
For the Kataifi Layer
  • 1 cup Toasted kataifi (shredded filo pastry) toasted until golden brown
  • 2 tablespoons Vegan pistachio cream spread melted
  • 1 tablespoon Tahini
For the Cheesecake Filling
  • 1 cup Cashews soaked for at least 4 hours
  • 8 ounces Vegan cream cheese
  • 1 tablespoon Vegan Greek-style yogurt can swap with vegan sour cream
  • 3 tablespoons Vegan pistachio cream spread
  • 1 teaspoon Vanilla extract
For the Topping
  • 3 tablespoons Vegan pistachio cream spread melted

Method
 

Preparation Steps
  1. Step 1: Soak cashews in water for at least 4 hours, drain and rinse them. Line a 9-inch loaf pan with parchment paper.
  2. Step 2: Blend Oreo-style cookies, melted vegan butter, and sea salt until resembling wet sand. Press into the loaf pan and chill for 30 minutes.
  3. Step 3: Toast kataifi in a skillet with vegan butter until golden, mix with melted pistachio cream and tahini, then spread over the crust.
  4. Step 4: Blend soaked cashews, vegan cream cheese, yogurt, melted pistachio cream, and vanilla extract until smooth, then pour over the kataifi layer.
  5. Step 5: Melt additional pistachio cream and pour over the cheesecake filling. Freeze for 15-30 minutes until set.
  6. Step 6: Lift out the cheesecake using parchment and cut into bars. Serve chilled and store leftovers in an airtight container.
