- Preheat your oven to 375°F (190°C) and prepare a 9x13 inch baking pan by lining it with parchment paper.
- Layer the bottom of the prepared pan with graham crackers, breaking them as necessary to fit snugly.
- Cream together 1 cup of unsalted butter with both granulated and brown sugars until light and fluffy. Add 2 large eggs and 1 teaspoon of vanilla extract, mixing until just combined. In a separate bowl, whisk together 2 cups of flour, 1 teaspoon of salt, and 1 teaspoon of baking soda before incorporating the dry ingredients into the wet mixture. Fold in 1 cup of chocolate chips and 1 cup of mini marshmallows.
- Spread the cookie dough mixture evenly over the graham crackers in the pan, pressing down slightly. Bake for 25-30 minutes until the edges are golden brown and a toothpick comes out clean.
- Remove from the oven and arrange the broken pieces of Hershey's chocolate bars on top. Allow the chocolate to soften for about 5 minutes.
- Cool the bars in the pan for 20-30 minutes until set. Lift out using the parchment paper and slice into squares.
