- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Sauté chopped onion and minced garlic in a skillet over medium heat for about 5 minutes until translucent.
- Combine ground beef, breadcrumbs, Parmesan, parsley, basil, cooled onion and garlic, eggs, marinara sauce, Italian seasoning, salt, and pepper in a large mixing bowl.
- Shape meat mixture into a rectangle about 1 inch thick on a sheet of parchment paper.
- Spread mozzarella cheese over the rectangle, leaving a border, and add optional fillings if desired.
- Roll the meatloaf carefully using the parchment paper, ensuring the seam is on the bottom.
- Transfer to the baking sheet with seam side down.
- Pour reserved marinara sauce over the top.
- Bake for approximately 60 minutes until the internal temperature reaches 160°F (70°C).
- Let the meatloaf rest for 15-20 minutes before slicing.
