- Prepare the Blueberry Compote: In a medium saucepan over medium heat, combine blueberries, honey (or maple syrup), and lemon juice. Cook for about 5 minutes, stirring occasionally until berries break down. For thicker texture, mix cornstarch with water and add to the compote, cooking for an additional minute until thickened. Allow to cool completely.
- Mix the Yogurt: In a mixing bowl, whisk together Greek yogurt and vanilla extract until silky smooth. Taste and add honey if sweetener is desired.
- Assemble the Bites: Fill silicone molds or mini muffin tins about ¾ full with yogurt mixture and add cooled blueberry compote on top. Swirl compote into yogurt with a toothpick.
- Freeze the Yogurt Bites: Place molds in the freezer and freeze for at least 3 hours until solid.
- Remove and Store: Carefully remove from molds; if needed, run warm water over molds. Store in an airtight container in the freezer.
