Ingredients

For the Yogurt Base
  • 2 cups Full-Fat Greek Yogurt Use Greek yogurt for best flavor and consistency.
  • 1 teaspoon Vanilla Extract Vanilla bean paste can be used for richer taste.
For the Blueberry Compote
  • 2 cups Fresh or Frozen Blueberries Can substitute with raspberries or strawberries.
  • 1/4 cup Honey or Maple Syrup Agave syrup or coconut sugar are alternatives.
  • 1 tablespoon Lemon Juice Lime juice can be used as an alternative.
  • 1 tablespoon Cornstarch Optional for thickening; can substitute with arrowroot starch.

Equipment

  • Medium saucepan
  • Mixing Bowl
  • Silicone molds or mini muffin tins

Method

Step-by-Step Instructions
  1. Prepare the Blueberry Compote: In a medium saucepan over medium heat, combine blueberries, honey (or maple syrup), and lemon juice. Cook for about 5 minutes, stirring occasionally until berries break down. For thicker texture, mix cornstarch with water and add to the compote, cooking for an additional minute until thickened. Allow to cool completely.
  2. Mix the Yogurt: In a mixing bowl, whisk together Greek yogurt and vanilla extract until silky smooth. Taste and add honey if sweetener is desired.
  3. Assemble the Bites: Fill silicone molds or mini muffin tins about ¾ full with yogurt mixture and add cooled blueberry compote on top. Swirl compote into yogurt with a toothpick.
  4. Freeze the Yogurt Bites: Place molds in the freezer and freeze for at least 3 hours until solid.
  5. Remove and Store: Carefully remove from molds; if needed, run warm water over molds. Store in an airtight container in the freezer.
