Ingredients
  

For the Salmon
  • 4 fillets Salmon Fillets the star of the dish
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper or white pepper
  • 1 tsp Garlic Powder or fresh garlic (about 2 cloves)
  • 1 tsp Seasoning Salt optional
For the Vegetables
  • 1 cup Bell Peppers (Red & Green) or yellow/orange peppers
  • 1 medium Onion or shallots
  • 3 cloves Garlic minced
  • 1 tsp Fresh Thyme or 1 tsp dried thyme
  • 1 whole Scotch Bonnet Pepper whole for mildness, seeds removed for more spice
  • 1 medium Tomato or tomato paste
For the Sauce
  • 1 cup Chicken Broth or vegetable broth/water
  • 2 tbsp Hoisin Sauce or 1 tsp each of brown sugar and browning sauce
  • 2 tbsp Soy Sauce or tamari for gluten-free
  • 1 tbsp Brown Sugar or honey
  • 2 tbsp Cooking Oil any neutral oil

Method
 

Step-by-Step Instructions
  1. Prep the Salmon: Rinse the salmon fillets under cold water with lime or lemon juice. Pat dry and season with salt, black pepper, and seasoning salt. Set aside.
  2. Brown the Salmon: Heat a skillet over medium-high heat, add cooking oil, and place the salmon fillets in the skillet. Cook for 5-7 minutes per side until golden brown. Transfer to a wire rack.
  3. Sauté the Aromatics: In the same skillet, leave 2 tbsp of oil and reduce the heat to medium. Add onion, garlic, bell peppers, tomato, thyme, and scotch bonnet pepper. Sauté for 3-4 minutes.
  4. Create the Brown Stew Sauce: Add hoisin sauce, soy sauce, and chicken broth to the vegetables. Stir well and gently return the salmon to the skillet. Cover and cook for an additional 2-3 minutes.
  5. Serve the Brown Stew Salmon: Check for doneness, ensuring it flakes easily. Spoon extra sauce over salmon before plating and garnish with fresh herbs if desired.
