Preparation Steps
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine 1 cup of softened unsalted butter and 1 cup of granulated sugar. Beat on medium speed for about 3-4 minutes until light and fluffy.
- Add 2 large eggs one at a time, mixing well after each addition. Then pour in 1 teaspoon of vanilla extract and blend until incorporated.
- In a separate bowl, whisk together 2 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
- Gradually fold the dry ingredients into the wet batter until a soft dough forms.
- Divide the dough and roll out between parchment paper to 1/4 inch thick. Cut into 3-inch long fries.
- Transfer the fries to the prepared baking sheet and bake for 12-15 minutes until lightly golden brown.
- In a medium bowl, beat together 4 ounces of softened cream cheese and 1/4 cup of softened unsalted butter until smooth. Gradually add 2 cups of powdered sugar and 2 tablespoons of milk until creamy.
- Serve the cookie fries warm with the sweet frosting dip.
