  • 2 tablespoons Mirin Or mix sugar with water
  • 3 tablespoons Soy Sauce Low-sodium option available
  • 1 tablespoon Sugar Adjust according to desired sweetness
  • 1 teaspoon Black Pepper To taste
For Garnishing
  • 2 large Eggs Drizzled on top for richness
  • 2 tablespoons Green Onion Freshly diced for garnish
  • 1 tablespoon Sesame Seeds For added crunch

Step‑by‑Step Instructions
  1. Prepare the Enoki Mushrooms by gently dividing them into smaller bundles.
  2. Wrap the Beef around the Enoki Mushrooms tightly.
  3. Make the Umami Sauce by combining dashi broth, mirin, soy sauce, sugar, and black pepper.
  4. Caramelize the Onions in a skillet with olive oil until golden brown.
  5. Cook the Beef Rolls seam-side down in the skillet with umami sauce for 3 minutes, then flip and cook for an additional 1-2 minutes.
  6. Add scrambled eggs over the beef rolls in the skillet.
  7. Garnish and serve with diced green onions and sesame seeds.
