Ingredients
  

For the Skewers
  • 2 medium Zucchini Fresh, firm
  • 4 tablespoons Unsalted Butter Can use salted butter
  • 3 cloves Minced Garlic Fresh minced preferred
For the Seasoning
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 teaspoon Salt Use kosher or sea salt for best results
  • 1 teaspoon Pepper Freshly ground to taste

Method
 

Preparation and Grilling
  1. Wash the zucchini thoroughly and slice into ½ inch thick rounds.
  2. Melt the butter in a saucepan over low heat and stir in minced garlic, simmering for 2-3 minutes.
  3. In a bowl, mix sliced zucchini with olive oil, salt, pepper, and prepared garlic butter, tossing gently.
  4. Thread zucchini slices onto soaked skewers, leaving space between each piece.
  5. Preheat grill to medium-high heat and grill skewers for 8-10 minutes, turning occasionally.
  6. Remove skewers from grill and serve, optionally drizzling with fresh lemon juice.
