Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium-high heat and brown the chicken breasts for about 5–6 minutes on each side. Remove and set aside.
  3. Sauté chopped onion in the same skillet for 2–3 minutes until translucent.
  4. Add minced garlic, diced red bell pepper, and zucchini, cooking for 3–4 minutes.
  5. Incorporate fresh spinach and dried herbs, and cook until spinach wilts.
  6. Add orzo, chicken broth, and lemon juice, stirring until combined.
  7. Nestle the browned chicken into the orzo mixture.
  8. Cover and bake in the preheated oven for 25–30 minutes.
  9. Remove cover, sprinkle feta cheese and olives, and bake for an additional 5 minutes.
  10. Let rest for a few minutes before serving.
