Step-by-Step Instructions
  1. In a large mixing bowl, whisk together soy sauce, water, and sugar until the sugar fully dissolves.
  2. Smash garlic cloves and add them to the marinade, along with fresh ginger slices.
  3. Submerge chicken thighs in the marinade, cover tightly, and refrigerate for at least 24 hours.
  4. Preheat grill to high heat, around 400°F (205°C).
  5. Remove chicken from marinade and grill for 5–7 minutes on each side until charred and cooked through.
  6. Splash reserved marinade into a pot on the grill to create a glaze.
  7. After grilling, transfer chicken to the pot, cover, and steam for about 10 minutes.
  8. Let grilled chicken rest before serving, garnished with green onions and sesame seeds.
