Ingredients
  

Dressing
  • ½ cup Mayonnaise or substitute with Greek yogurt
  • 2 tablespoons Red Wine Vinegar or use apple cider vinegar
  • 1 clove Minced Garlic fresh garlic preferred
  • to taste Sweetener honey or agave can be used
  • 1 teaspoon Italian Seasoning or a mix of oregano and basil
  • to taste Salt sea salt adds nice texture
  • to taste Red Pepper Chili Flakes optional for spice
Salad
  • 4 cups Shredded Iceberg Lettuce or substitute with romaine or mixed greens
  • 4 ounces Ham or substitute with turkey/chicken
  • 4 ounces Salami or substitute with turkey/chicken
  • 4 ounces Pepperoni or substitute with turkey/chicken
  • 4 ounces Provolone Cheese or substitute with mozzarella/cheddar
  • 1 cup Grape Tomatoes or any cherry tomatoes
  • ½ cup Sliced Pepperoncini Peppers or substitute with banana peppers
  • 1 medium Red Onion or green onions for milder taste

Method
 

Dressing Preparation
  1. In a small mixing bowl, whisk together mayonnaise, red wine vinegar, minced garlic, and sweetener until fully combined. Sprinkle in Italian seasoning, red pepper chili flakes, and season with salt and pepper to taste. Let the dressing sit for about 5 minutes.
Salad Preparation
  1. While the dressing is resting, slice ham, salami, and pepperoni into ¼-inch pieces. Cut provolone cheese into small cubes. Shred iceberg lettuce.
Salad Assembly
  1. In a large salad mixing bowl, combine the shredded lettuce, sliced meats, sliced pepperoncini peppers, halved grape tomatoes, and diced red onion. Pour the dressing over the top and gently toss the salad.
Taste and Serve
  1. Taste the salad and adjust the seasoning if needed. Transfer to a serving bowl or individual plates.
