- In a large pan or Dutch oven, heat olive oil over medium-high heat. Once shimmering, add ground beef, diced onion, and chopped bell pepper. Cook for about 5-7 minutes until beef is browned and onions are translucent.
- Stir in minced garlic, cooking for another minute until fragrant.
- Add fire roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper. Stir well for about 2 minutes.
- Place chopped cabbage on top of the mixture. Cover and reduce heat to medium, cooking for 15-20 minutes until cabbage is tender.
- Sprinkle shredded cheese over the mixture, cover again, and let cook for an additional 5 minutes or until the cheese is melted.
