  • 2 tablespoons olive oil or vegetable oil
  • 1 pound ground beef can substitute with ground turkey or chicken
  • 1 medium sweet onion can substitute with yellow or red onion
  • 1 medium orange bell pepper optional for stricter diets
  • 3 cloves garlic minced
  • 1 can fire roasted diced tomatoes about 14.5 ounces
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon dried oregano can substitute with Italian seasoning
  • 1 teaspoon garlic powder optional
  • 1 teaspoon onion powder optional if using fresh onion
  • to taste salt
  • to taste pepper
  • 4 cups green cabbage chopped
  • 1 cup shredded cheddar or jack cheese or any good melting cheese
Optional Toppings
  • to taste fresh parsley for garnish
  • to taste sour cream optional

Method
 

Step-by-Step Instructions
  1. In a large pan or Dutch oven, heat olive oil over medium-high heat. Once shimmering, add ground beef, diced onion, and chopped bell pepper. Cook for about 5-7 minutes until beef is browned and onions are translucent.
  2. Stir in minced garlic, cooking for another minute until fragrant.
  3. Add fire roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper. Stir well for about 2 minutes.
  4. Place chopped cabbage on top of the mixture. Cover and reduce heat to medium, cooking for 15-20 minutes until cabbage is tender.
  5. Sprinkle shredded cheese over the mixture, cover again, and let cook for an additional 5 minutes or until the cheese is melted.
