Ingredients
  

For the Sauce
  • 2 tablespoons butter can be omitted in creamy version
  • 2 cloves garlic minced
  • 1 cup cream substitute with broth for a lighter option
  • 3/4 cup Parmesan cheese freshly grated
  • 2 tablespoons white miso paste star ingredient
  • 1 squeeze lemon juice
  • to taste pinch black pepper
  • 1 cup hot water to dissolve miso
For the Pasta
  • 200 grams pasta your preferred type

Method
 

Directions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add 200 grams of pasta and cook until al dente, about 8–10 minutes. Reserve a cup of pasta water before draining.
  2. Sauté the Garlic: In a skillet, melt 2 tablespoons of butter over medium heat. Add 2 minced garlic cloves and sauté for 1 minute until fragrant.
  3. Create the Creamy Base: Pour in 1 cup of cream, reduce heat, and simmer for 2–3 minutes, stirring until combined.
  4. Incorporate Miso and Cheese: Whisk in 3/4 cup of Parmesan until melted. Add 2 tablespoons of white miso and a squeeze of lemon juice, stirring well.
  5. Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat evenly. Use reserved pasta water to adjust the sauce consistency as needed. Heat through.
  6. Serve and Garnish: Plate the pasta while hot, and garnish with black pepper and fresh herbs if desired.
