Method
 

Instructions for One Pan Greek Vegetables
  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the vegetables into bite-sized pieces and spread them on a baking sheet.
  3. Drizzle olive oil over the veggies, sprinkle oregano, salt, and pepper, and toss to coat.
  4. Roast the vegetables for 25–30 minutes until tender and slightly charred.
  5. In the last 5 minutes, add crumbled feta cheese on top and return to oven.
  6. Remove from oven, let cool slightly, and serve.
