Method
 

Step-by-Step Instructions
  1. Peel and prepare the oranges, removing zest and as much white pith as possible.
  2. Puree the peeled oranges until smooth to achieve about 4 cups of orange puree.
  3. Measure the puree and adjust the sugar based on the 3:4 sugar to fruit ratio.
  4. Combine orange puree, lemon juice, and sugar in a heavy-bottomed pot.
  5. Boil the mixture, stirring frequently until it reaches 220°F.
  6. Process the jam into sterilized jars, leaving headspace and sealing each jar.
  7. Cool and store the jam in a boiling water bath for preservation.
