Step-by-Step Instructions
  1. Start by bringing a large pot of salted water to a rolling boil over high heat. Add your pasta of choice and cook it according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to cool down.
  2. In a small bowl, whisk together your zesty Italian dressing ingredients or use a pre-made version. Combine olive oil, vinegar, garlic, and any herbs you prefer. Adjust seasoning as needed.
  3. While the pasta cools, chop your bell peppers and cucumbers into bite-sized pieces. Arrange them in a large mixing bowl.
  4. Add the cooled pasta to the mixing bowl with the chopped vegetables. Include the chickpeas and drizzle your prepared dressing over the mixture. Fold gently until well coated.
  5. Cover the bowl with plastic wrap or transfer to an airtight container, then refrigerate for at least 30 minutes to allow flavors to meld.
  6. When ready to serve, toss the salad to redistribute the dressing. Garnish with extra herbs or crumbled feta cheese, and present in a large bowl.
