- Start by taking a large mixing bowl and adding softened cream cheese. Blend in sour cream or Greek yogurt until smooth and creamy. Mix in shredded cheese and seasonings.
- Add diced bell peppers, shredded carrots, chopped green onions, and chopped spinach to the creamy filling. Gently fold until evenly distributed.
- Lay a tortilla flat on a clean surface. Spread a generous layer of the veggie filling over the tortilla, leaving a ½-inch border.
- Beginning at one end of the tortilla, tightly roll it up, keeping the filling inside. Ensure to press down gently to keep it compact.
- Wrap each rolled tortilla tightly in plastic wrap. Place them in the refrigerator to chill for at least 30 minutes.
- After chilling, unwrap the roll ups and slice into 1-inch pinwheels. Arrange on a serving platter to enjoy.
