For the Vegetables
  • 1 cup Diced Bell Peppers Mix of red, yellow, and green.
  • 1 cup Shredded Carrots
  • 0.5 cup Chopped Green Onions
  • 1 cup Chopped Spinach Fresh or thawed from frozen.
For Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Preparation Steps
  1. Start by taking a large mixing bowl and adding softened cream cheese. Blend in sour cream or Greek yogurt until smooth and creamy. Mix in shredded cheese and seasonings.
  2. Add diced bell peppers, shredded carrots, chopped green onions, and chopped spinach to the creamy filling. Gently fold until evenly distributed.
  3. Lay a tortilla flat on a clean surface. Spread a generous layer of the veggie filling over the tortilla, leaving a ½-inch border.
  4. Beginning at one end of the tortilla, tightly roll it up, keeping the filling inside. Ensure to press down gently to keep it compact.
  5. Wrap each rolled tortilla tightly in plastic wrap. Place them in the refrigerator to chill for at least 30 minutes.
  6. After chilling, unwrap the roll ups and slice into 1-inch pinwheels. Arrange on a serving platter to enjoy.
