Ingredients
  

For the Stir Fry
  • 14 oz Firm Tofu Use firm or extra-firm for the best texture.
  • 1 spray Avocado Oil Spray Great for high-heat cooking.
  • 1 medium Shallot Diced onion works well if you’re out of shallots.
  • 3 cloves Garlic Freshly minced for maximum aroma.
  • 2 medium Zucchini Chopped into ½-inch half moons.
  • 4 medium Carrots Peeled and chopped.
  • 1 medium Bell Pepper Select red for optimal sweetness.
  • Salt & Pepper To taste.
  • Optional Garnish Green onions, parsley, or toasted sesame seeds.
For the Sauce
  • 2 tbsp Toasted Sesame Oil Adds a nutty depth to the stir fry.
  • 3 tbsp Tamari or Soy Sauce Use tamari for a gluten-free version.
  • 1 tsp Ground Ginger Can swap for freshly grated ginger.
  • 1 tbsp Rice Vinegar Balances flavors beautifully.
  • 1 tbsp Cornstarch Great for thickening the sauce.

Method
 

Step-by-Step Instructions
  1. Begin by draining the tofu. Then, wrap it in paper towels to absorb excess moisture and place a heavy object on top for about 15 minutes.
  2. In a bowl, combine the cornstarch with a tablespoon of water to create a slurry. Then, add the toasted sesame oil, tamari or soy sauce, ground ginger, and rice vinegar. Whisk until smooth, and set aside.
  3. Heat a large skillet over medium-high heat and spray with avocado oil. Once hot, add the pressed tofu in a single layer. Let it cook for about 5 minutes until golden brown, then flip and cook for another 5 minutes.
  4. In the same skillet, add a little more oil if needed. Sauté the diced shallots and minced garlic over medium heat for about 2 minutes.
  5. Add the chopped zucchini, carrots, and bell pepper to the pan. Stir-fry for about 10-12 minutes until tender-crisp.
  6. Return the cooked tofu to the pan and pour the sauce over the vegetables and tofu. Cook for about 3 minutes until the sauce thickens slightly.
