  • 1 cup Quinoa Rinse thoroughly
  • 2 cups Broccoli Florets Roasted until slightly crispy

  • 1/2 teaspoon Kosher Salt Adjust to taste
  • 1/4 teaspoon Ground Black Pepper Adjust to taste
  • 2 tablespoons All-Purpose Flour For thickening cheese sauce
  • 1 medium Carrot Finely diced
  • 2 cloves Minced Garlic Fresh is recommended

  • 1 can Cannellini Beans Drained
  • 1/2 cup Greek Yogurt Can substitute with sour cream
  • 1 cup Cheddar Cheese (Sharp or Medium) Shredded
  • 1 cup Mozzarella/Fontina/Provolone Cheese Shredded
  • 1 teaspoon Dried Oregano Can substitute with Italian seasoning
  • 1/4 teaspoon Cayenne Pepper Adjust to taste
  • 1/4 cup Chopped Fresh Herbs Optional for garnish

Method
 

Step-by-Step Instructions
  1. Rinse quinoa under cold water, then combine with broth in a saucepan. Simmer, cover, and cook for 20 minutes. Set aside to cool.
  2. Preheat oven to 400°F (200°C) and spray a casserole dish with nonstick spray.
  3. Toss broccoli with olive oil, salt, and pepper. Roast on a baking sheet for 15-20 minutes.
  4. In a skillet, heat olive oil and sauté onion and carrot for 5 minutes. Add garlic and cook for another minute.
  5. Stir in flour over the veggies, then whisk in reserved broth and milk until thickened.
  6. Remove from heat, mix in oregano, cayenne, beans, quinoa, and broccoli.
  7. Add Greek yogurt and cheeses to the mixture, stir well, then transfer to casserole dish.
  8. Top with remaining cheese and bake for 15 minutes, then broil for 3-4 minutes until golden.
  9. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
  10. Serve and enjoy with a side salad or crusty bread.
