  • 380 grams Mashed Sweet Potato Adjust water based on moisture content
  • 2 tablespoons Water Add based on sweet potato moisture
  • 2 tablespoons Light Olive Oil Can substitute with melted coconut or avocado oil

Method
 

Step-by-Step Instructions
  1. In a stand mixer, combine 3 cups of sifted bread flour, 1 packet of instant yeast, ¼ cup of sugar, 1 teaspoon of salt, and 1 teaspoon of baking powder. Mix on low speed until combined.
  2. With the mixer running, incorporate 1 cup of mashed sweet potato and about 2 tablespoons of water into the dry ingredients. Mix until the sweet potato is evenly distributed.
  3. Increase the mixer speed to medium and blend for about 8 to 10 minutes, adding in 2 tablespoons of light olive oil halfway through until the dough is smooth.
  4. Transfer the dough into a greased bowl, cover with a kitchen towel, and let it rise for 60 to 90 minutes, or until it doubles in size.
  5. Punch down the dough gently and roll it out into a rectangle approximately 16x5 inches. Roll tightly to form a cylinder and cut into 16 pieces.
  6. Place each piece on parchment or steamer paper and let them rise for another 20 to 30 minutes.
  7. Prepare a steamer with boiling water and steam the buns for about 15 minutes, or until a toothpick comes out clean.
