  • 1 tablespoon Mirin or cooking sake and sugar for non-alcoholic
  • 2 tablespoons Toasted Sesame Oil to ensure best flavor
  • 1 teaspoon Grated Ginger fresh ginger is essential
  • 1 tablespoon Neutral Oil like Grapeseed or Vegetable
  • 2 teaspoons White Sugar balances flavors and aids emulsification
Oysters
  • 12 pieces Oysters Sydney Rock or Pacific
  • 1 tablespoon Salmon Roe optional for garnish
  • 2 tablespoons Chives fresh for garnish

Method
 

Preparation
  1. In a mixing bowl, whisk together the white sugar, Japanese soy sauce, rice vinegar, and mirin until the sugar dissolves, about 1-2 minutes.
  2. Gradually drizzle in the toasted sesame oil and neutral oil, adding grated ginger while whisking until smooth.
  3. Place oysters on a platter using crushed ice, rock salt, or leafy greens to stabilize them.
  4. Spoon approximately 3/4 teaspoon of dressing over each small oyster and 1 1/4 teaspoons for larger ones.
  5. Top oysters with salmon roe and a sprinkle of fresh chives before serving.
