Preparation Steps
- Preheat your oven to 300°F (150°C) and prepare a baking dish with boiling water for the water bath.
- Combine heavy cream, milk, and Thai tea mix in a medium saucepan. Heat until just boiling, reduce heat and steep for 5-10 minutes.
- Strain the tea-infused cream through a fine mesh sieve into a large bowl. Discard the tea leaves.
- In another bowl, whisk together the egg yolks and sweetened condensed milk until smooth and creamy.
- Slowly drizzle the warm tea-infused cream into the egg yolk mixture while whisking continuously.
- Divide the custard mixture into three 8-ounce ramekins, filling each about three-quarters full.
- Pour preheated hot water into the baking dish until it reaches halfway up the sides of the ramekins.
- Bake for 25 to 30 minutes until edges are set but centers jiggle slightly.
- Cool the ramekins on a wire rack, then refrigerate covered for at least 2 hours.
- Before serving, sprinkle sugar on top of each custard and caramelize using a kitchen torch or under the broiler.
