  • 4 large Egg Yolks Save the whites for other uses like meringues.
  • 1/2 cup Sweetened Condensed Milk Can substitute with coconut cream for a dairy-free version.
For the Topping
  • 1/4 cup Granulated Sugar Use plain white sugar for best results.

Method
 

Preparation Steps
  1. Preheat your oven to 300°F (150°C) and prepare a baking dish with boiling water for the water bath.
  2. Combine heavy cream, milk, and Thai tea mix in a medium saucepan. Heat until just boiling, reduce heat and steep for 5-10 minutes.
  3. Strain the tea-infused cream through a fine mesh sieve into a large bowl. Discard the tea leaves.
  4. In another bowl, whisk together the egg yolks and sweetened condensed milk until smooth and creamy.
  5. Slowly drizzle the warm tea-infused cream into the egg yolk mixture while whisking continuously.
  6. Divide the custard mixture into three 8-ounce ramekins, filling each about three-quarters full.
  7. Pour preheated hot water into the baking dish until it reaches halfway up the sides of the ramekins.
  8. Bake for 25 to 30 minutes until edges are set but centers jiggle slightly.
  9. Cool the ramekins on a wire rack, then refrigerate covered for at least 2 hours.
  10. Before serving, sprinkle sugar on top of each custard and caramelize using a kitchen torch or under the broiler.
