Method
 

Batter Preparation
  1. Whisk together eggs, castor sugar, and honey (if using) with rose water until the sugar dissolves for 3-4 minutes.
  2. Sift in cake flour and baking powder, whisk until combined.
  3. Gradually add melted butter, whisking until fully incorporated.
  4. Cover and chill the batter for at least 1 hour.
Baking
  1. Preheat oven to 400°F (200°C) and grease the madeleine pan.
  2. Gently mix the chilled batter and transfer to piping bag.
  3. Fill each mold about 80-90% full and bake for 10-12 minutes.
  4. Reduce temperature to 350°F (180°C) after placing the pan in the oven.
  5. Remove from oven when golden brown, let cool completely.
Glazing
  1. Combine confectioners’ sugar, rose water, and water for glaze consistency.
  2. Brush glaze over cooled madeleines and sprinkle with rose petals.
