Batter Preparation
- Whisk together eggs, castor sugar, and honey (if using) with rose water until the sugar dissolves for 3-4 minutes.
- Sift in cake flour and baking powder, whisk until combined.
- Gradually add melted butter, whisking until fully incorporated.
- Cover and chill the batter for at least 1 hour.
Baking
- Preheat oven to 400°F (200°C) and grease the madeleine pan.
- Gently mix the chilled batter and transfer to piping bag.
- Fill each mold about 80-90% full and bake for 10-12 minutes.
- Reduce temperature to 350°F (180°C) after placing the pan in the oven.
- Remove from oven when golden brown, let cool completely.
Glazing
- Combine confectioners’ sugar, rose water, and water for glaze consistency.
- Brush glaze over cooled madeleines and sprinkle with rose petals.
