Preparation Steps
- Prepare the vegan passion fruit curd at least 1-2 days in advance.
- Soak the cashews in water for at least 4 hours or use the quick soak method.
- For the crust, blitz the vegan cookies, unsalted vegan butter, and sea salt until resembling coarse crumbs.
- Refrigerate the crust for at least 30 minutes to set.
- After soaking, blend soaked cashews with prepared vegan passion fruit curd, vegan cream cheese, vegan Greek-style yogurt, and vanilla extract until smooth.
- Pour the filling over the chilled crust and smooth the top.
- Refrigerate for at least 6 hours or overnight to set properly.
- Reheat remaining passion fruit curd and pour it over the cheesecake before slicing.
- Serve cold and enjoy!
