Step‑by‑Step Instructions for Garlic Chicken Lo Mein
- Begin by slicing your chicken breast or thighs into bite-sized pieces. In a mixing bowl, combine the chicken with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, and 1 teaspoon of sesame oil. Allow the chicken to marinate for about 5-10 minutes while you prepare the other ingredients.
- While the chicken marinates, bring a large pot of water to a boil. Cook 8 ounces of lo mein noodles or spaghetti according to package directions, usually about 6-8 minutes. When done, drain the noodles well and toss them in a little sesame oil to prevent sticking. Set them aside for later.
- In a small bowl, whisk together the sauce for your Garlic Chicken Lo Mein. Mix 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of hoisin sauce, 1 teaspoon of brown sugar, and 1/4 cup of chicken broth or water. Stir until the sugar fully dissolves.
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated chicken and sauté for approximately 5-7 minutes or until golden brown and cooked through. Remove the chicken from the pan and set it aside.
- In the same pan, lower the heat to medium and add the minced garlic (and ginger, if using). Sauté for about 30 seconds until fragrant.
- Add the sliced bell peppers, shredded carrots, and snap peas to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
- Return the cooked chicken to the pan and pour the prepared sauce over the mixture. Stir well to coat everything evenly. Allow it to simmer for about 1-2 minutes.
- Finally, add the cooked lo mein noodles and sliced green onions to the skillet. Toss everything together gently and cook for an additional minute. Serve immediately, garnished with extra green onions or sesame seeds if desired.
