Method
 

Step-by-Step Instructions
  1. Preheat your grill to a steady 225°F (107°C).
  2. Carefully remove the membrane from the back of the ribs.
  3. In a bowl, combine apple cider vinegar, brown sugar, sea salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  4. Coat both sides of the ribs with your prepared marinade and wrap in plastic wrap.
  5. Soak wood chips in water for about 30 minutes if using.
  6. Place the ribs bone-side down on the grill grates away from direct heat.
  7. Cook the ribs for approximately 4-5 hours at 225°F (107°C).
  8. Baste the ribs with barbecue sauce every 30 minutes during the last hour.
  9. Check for doneness; ribs should bend easily and meat should pull away from bones.
  10. Let the ribs rest for 10-15 minutes before slicing and serving.
