Preparation Steps
- Prepare the gelatine according to the package instructions, dissolving it in warm water and stirring until smooth.
- In a large mixing bowl, combine mixed berries with elderflower cordial. If using ice cubes, crush them and add them to the mixture.
- Gradually stir the soda water into the prepared gelatine mixture. Incorporate it lightly to maintain the fizz.
- Gently fold the berry mixture into the gelatine and soda combination.
- Pour the mixture into individual serving cups or molds, filling about three-quarters full. Refrigerate for about two hours or until set.
- Serve topped with Greek yogurt, a slice of orange, fresh mint, and optional dark chocolate shavings.
