Fizzy berry jellies are a light and refreshing dessert combining mixed berries with a fizzy twist, making them a healthy, low-calorie, gluten-free treat.

Ingredients
  

For the Jelly
  • 500 ml Soda Water Sparkling water is an excellent alternative.
  • 300 g Mixed Berries Strawberries, blueberries, raspberries; substitute with seasonal fruits.
  • 10 g Gelatine Vegetarian gelatine like agar-agar can be used if required.
  • 100 ml Elderflower Cordial Lemon juice can be a substitute.
For Serving
  • 8 Sponge Fingers Ladyfinger cookies can be a sweet alternative.
  • 1 Oranges Zest and acidity add brightness; lemon juice can also work.
  • 200 g Greek Yoghurt Non-dairy yogurt is perfect for a vegan version.
  • 4 Mint Sprigs Can be omitted if not available.
  • 30 g Dark Chocolate (70%) Optional garnish.

Method
 

Preparation Steps
  1. Prepare the gelatine according to the package instructions, dissolving it in warm water and stirring until smooth.
  2. In a large mixing bowl, combine mixed berries with elderflower cordial. If using ice cubes, crush them and add them to the mixture.
  3. Gradually stir the soda water into the prepared gelatine mixture. Incorporate it lightly to maintain the fizz.
  4. Gently fold the berry mixture into the gelatine and soda combination.
  5. Pour the mixture into individual serving cups or molds, filling about three-quarters full. Refrigerate for about two hours or until set.
  6. Serve topped with Greek yogurt, a slice of orange, fresh mint, and optional dark chocolate shavings.

Notes
