- Preheat your oven to 375°F (190°C) and gather your ingredients and equipment.
- Heat 2 tablespoons of olive oil in a large sauté pan over medium heat. Add thinly sliced potatoes and sauté for about 10 minutes.
- Add finely chopped onion and minced garlic to the pan and sauté for an additional 3 to 4 minutes.
- In a separate bowl, whisk together 6 eggs, 1/2 cup of milk, and salt and pepper to taste until smooth.
- Spread the potato mixture evenly in the sauté pan and pour the egg mixture over it.
- Sprinkle 2 cups of spinach and 1/2 cup of shredded Parmesan cheese on top.
- Cook on medium heat for 4 to 5 minutes until edges are set.
- Transfer to the oven and bake for 15 to 20 minutes until fully set and golden.
- Allow to cool for a few minutes before slicing into wedges.
