  • 2 cloves Garlic optional for a gentler flavor
  • 6 large Eggs can substitute with egg alternatives
  • 1/2 cup Milk almond milk works for dairy-free
  • to taste Salt and Pepper
  • 2 cups Fresh Spinach can replace with kale or arugula
  • 1/2 cup Parmesan Cheese substitute with pecorino or nutritional yeast
  • 2 tablespoons Butter can replace with olive oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and gather your ingredients and equipment.
  2. Heat 2 tablespoons of olive oil in a large sauté pan over medium heat. Add thinly sliced potatoes and sauté for about 10 minutes.
  3. Add finely chopped onion and minced garlic to the pan and sauté for an additional 3 to 4 minutes.
  4. In a separate bowl, whisk together 6 eggs, 1/2 cup of milk, and salt and pepper to taste until smooth.
  5. Spread the potato mixture evenly in the sauté pan and pour the egg mixture over it.
  6. Sprinkle 2 cups of spinach and 1/2 cup of shredded Parmesan cheese on top.
  7. Cook on medium heat for 4 to 5 minutes until edges are set.
  8. Transfer to the oven and bake for 15 to 20 minutes until fully set and golden.
  9. Allow to cool for a few minutes before slicing into wedges.
