  • 28 ounces Canned Whole Tomatoes Preferably San Marzano, crushed by hand.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 cup Black or Castelvetrano Olives Halved and pitted.
  • 2 tablespoons Capers Rinsed to reduce excess salt.
For the Fish
  • 1.5 pounds White Fish Cut into 4 equal pieces; options include cod, haddock, snapper, or halibut.
  • 1 teaspoon Sea Salt To season the fish.
For Garnish
  • 1 bunch Fresh Basil or Flat Leaf Parsley Chopped just before serving.
  • 1 teaspoon Red Pepper Flakes Optional for a hint of heat.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and heat a large ovenproof skillet over medium heat.
  2. Melt unsalted butter in the skillet and sauté chopped garlic and anchovy fillets for 1-2 minutes.
  3. Deglaze with a splash of dry white wine, cooking for about 4 minutes until reduced.
  4. Add crushed whole tomatoes, oregano, and thyme. Let simmer for about 10 minutes.
  5. Fold in the halved olives and rinsed capers into the sauce.
  6. Season fish with sea salt and arrange the pieces in the sauce.
  7. Transfer the skillet to the preheated oven and bake for 8-10 minutes until fish is cooked.
  8. Garnish with fresh basil or parsley and optional red pepper flakes before serving.
